Chef Babette believed so strongly in health and nutrition that she opened the doors to her first restaurant, Stuff I Eat in 2008. Many people told her that a vegan restaurant would fail in the “'hood.” “People don’t eat vegan food in the hood,” many locals would proclaim (especially during a time when the community was suffering from a significant economic downturn).

However, Chef Babette believed that West Los Angeles and other communities west of La Brea Avenue, were not in need of another vegan restaurant. Instead, she sought to serve her community and emphasized that, “If the food is available, I believe my community will eat it.” Chef Babette understood that great tasting food could be healthy and life-sustaining.
